Who are we? Hen & Flour is a creole-inspired, fried chicken restaurant located in Downtown Medford. We are owned by David and Chambree Nowakowski, with family members Jon Coleman (brother) and Brigitte Nowakowski (mom) adding their creative spark to the kitchen. 

David has extensive experience in the culinary industry and graduated from Le Cordon Bleu, College of Culinary Arts in 2012. Until now, his skills and passion for cooking had only been shared with family members and close friends. Many times, he has heard comments like “This (insert any food name) is sooo good!” and “You should start a business!” …and now, David is sharing his love for food and a carefully curated menu with all of you!

Chambree is the numbers gal. Formally educated at UCR’s School of Business, she graduated with a bachelor’s degree in 2012. From there she has furthered her business acumen via a career in banking. She works diligently in the background of the day-to-day operations, but you may occasionally catch her behind the counter on a Saturday.

If you love the fried chicken sandwich, you have Jon to thank for it. His culinary creation has been one of the most popular items on our menu since we added it, and for good reason. Jon, too, has spent a significant part of his career in restaurants, but truly excels in his own kitchen. His ability to develop flavor profiles and pairings is amazing, and we can’t wait to showcase more of his recipes! 

Brigitte is literally the tie that binds us together. Her family roots stemming from Louisiana have given David and Jon the building blocks for the recipes we use at Hen & Flour. Her culinary experience is vast, covering many retail and commercial kitchen settings, and we are so glad we get to tap into that wealth of knowledge. 

Why Downtown? To be honest, we didn’t choose our location, so much as it chose us. The opportunity presented itself, and after many discussions and dreaming and planning and running the numbers, we decided to take the leap. Our being located downtown was simply a nice bonus at the time. In the months leading up to our opening, we have learned so much more about the downtown community and the businesses that operate here. We have met other business owners and professionals working downtown, and there is something that always comes up in conversation. We seem to all want the same thing: to see Downtown Medford thriving. This common goal unites us and exposes a truism that we succeed together. We are a network, each contributing something to the downtown area that matters, that is needed, and with this mindset, we can work together to build a stronger community.
